WILD ON ETHIOPIA
COFFEE GONE WILD!
For our COFFEE OF THE MONTH, we have gone wild on Ethiopia Yirgacheffe,
the latest Fair Trade Organic offering from The Great Lakes Coffee Roasting
Company. This coffee was just recently
certified Fair Trade and is one of the few Fair Trade coffees on the African
continent.
In
the wilds of Ethiopia, coffee was first discovered. It still grows wild in the southwest of the
country under a rainforest canopy. Who
knew that a land we associate with dearth could be a land of such coffee
wealth. Ethiopia boasts three of the best coffees in the
world; Harrar, Sidamo and Yirgacheffe.
Our Yirgacheffe is grown at
elevations of 5,000 to 6,500 feet and is hand-picked by small scale
farmers. It is then processed by soaking
in fermentation tanks to remove the
pulp. This wet process imparts a cleaner tasting, more floral and nuanced
coffee, unlike a dry-processed Harrar which is much more earthy.
The
aroma of this coffee is out of this world.
The cup comes alive with apricot, bergamot and fresh ginger. Sweetness carries into the flavor. You can taste lime, lemon peel and candied
fruit balanced by a spicy earthiness on the front of the palate. Acidity is sparkling and lively complimenting
the full body. The finish is smooth and
warming.
